This weekend I decided to do my best impression of a domestic goddess and get baking in the kitchen. Because we're all in lockdown everyone seems to baking 10x more than usual, including me! I've done chocolate cake, cupcakes meringues and now these delicious mini egg cookies. They're easy to make, really yummy and perfect for a quick treat with a cuppa tea.
INGREDIENTS
- 300g Plain Flour
- 1/2 tsp Bicarbonate of Soda
- 1/2 tsp Salt
- 1/2 tbsp Cornflour
- 115g Unsalted Butter
- 100g Light Brown Sugar
- 100g Granulated Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 80g Mini Eggs (2x 90g bags)
- Chocolate chips (though chocolate buttons work too!
Makes approximately 15 cookies!
METHOD
1) First combine the dry ingredients and set aside. This includes the flour, bicarbonate of soda, salt and cornflour. Next, in a small pan, melt the butter on a low heat.
2) Whilst the butter is melting measure out the granulated and brown sugar.
3) Combine the melted butter and sugar in a bowl and whisk well for 2-3 minutes until combined.
4) Add the egg and vanilla essence. Mix until combined. Here you should begin to see the mix lightening in colour.
5) Add the flour mixture and combine until it forms a dough. This is best started with an electric whisk and then, when it begins to separate, move onto using your hands. It should look something like it does below!
6) Roll into small balls - the mixture should make about 15 cookies. Make sure to leave space between them on the baking tray as they will expand!! If you prefer your cookies a bit flatter, flatten the mixture slightly with your hands.
You can now add the mini eggs and the chocolate chips - or your decoration of choice! Make sure you push them into the mixture or they'll be in danger of falling off and burning like a couple of mine did.
7) Bake at 180 degrees celsius for 12-14 minutes or until golden brown. Leave to cool for 15 minutes!
